Kiwi Fruit Leather Recipe (Persian Kiwi Lavashak)

Ingredients

  • 1 kg Kiwi
  • ½ tbsp Salt

Instructions

  • Peel the kiwis and cut them into small pieces.

  • Cook them until soft. You don’t need to add water, if the kiwis are ripe, they let out water later.

  • Add sugar or salt. Add some salt to the kiwis, if they’re too sour, add approximately one spoonful of sugar to make them sweet and sour.
  • When the boiling water fully evaporates, use a masher or the back of a spoon to crush the baked kiwis.
    Blend the kiwis to fully soften them. You don’t need to strain them.

  • Cook again on the stove to get rid of any extra water.

  • Evenly spread the puree on a tray and let the contents dry under the sun or in an oven.

Notes

  • The fruit leather should not be too thick because it can delay the drying process and cause mold.
  • To maintain a radiant color, you can use some green food coloring. However, I did not use that in order to make healthy homemade fruit leathers.
  • Don’t cover the fruit leather with plastic while it’s drying. It needs air or it will mold.
  • You can add a specific amount of sugar to the kiwis while they’re baking to get a sweet and sour taste. For 1 kg of kiwi, 2 tablespoons of sugar suffice.
  • If you prefer sour fruit leather, don’t add sugar.
  • If the kiwis are sour and savory, and you like sour fruit rolls, add some salt.
