Sour lavashak

In Iran, fruit leather is called “Lavashak” and Iranians, particularly like sour fruit leather. Sour Lavashak is usually made of fruits like tart cherry, sour pomegranate, black plum, barberry, and kiwi. By adding some salt, the Lavashak becomes sour and savory, tasting even lovelier.

Sometimes, Lavashak is served with pomegranate paste, prune, dried apricot, and Torshak.

Lavashak and Torshak are a fantastic combination, truly mouthwatering.

I am going to introduce some methods for making tart fruit leather. These fruit leathers taste fantastic.

How to make sour Lavashak

If you love the sour taste of Lavashak, use one of these methods while making fruit leathers:

1- The most important thing is to use sour fruits like tart cherry, sour pomegranate, black plum, cornelian cherry, and kiwi.

Apple and peach give some sweetness to the Lavashak. I suggest you make these delicious snacks at home!

2- Adding salt can make your Lavashak more sour and savory.

3- You can also add some lemon juice.

4- Some people add citric acid to their fruit leathers. However, since it’s a chemical compound and has its disadvantages, I don’t use it in my recipes.

5- Instead of citric acid, you can use pomegranate paste or plum paste.

6- Barberry is also a great choice. You can soak some barberry and add them to the Lavashak during its final cooking steps. It makes the Lavashak sourer by leaps and bounds and is also very beneficial.

7- You can also add tamarind as the ingredients are cooking. However, they should be soaked and pitted before.

How to have sour fruit leathers while serving?

There are several methods for making your Lavashak sourer as you eat it. Try any of the following methods, and I’m sure you’ll fall in love with them:

1- Serve your fruit strips with torshak. Torshak and Lavashak have always gone well together. This is a very popular combo among Iranians. Make sure to check my Torshak post out. I’ve written 4 easy recipes for making torshak at home.

2- Soak your Lavashak in some pomegranate paste, or brush them with it.

3- Rub some Seville orange paste on the fruit rolls.

4- Make stuffed Lavashak. Put sour things like dried apricots, plums, pomegranate paste, Ghare Ghoroot, and Nardoon (dried pomegranate arils) and roll them up!

5- Serve the sour fruit rolls with some special sour sauce. The recipe for this sauce is at the end of this post.

6- My personal favorite; dip the fruit strips in pomegranate paste, plum, dried tart cherries, dried apricots, and cornelian cherries. This one tastes out of this world!

How to make sour sauce?

For the sour sauce, you simply need to grab fruits like sour cherries, raspberries, or any other fruits, put them on the stove, and add some salt. When they soften, take the watery part out and pour it into a bowl.

Another method is to separate some of the sauce from the cooking fruits while making lavashak. The sauce shouldn’t be too thick. You can use this sauce for fruit rolls and even roasted chicken.

Persian sour candy – Sour candy Fruit Toffee

For making Persian sour candy, you need to knead the fruit leathers with hands dipped in water or oil. When the Lavashak becomes soft and pasty, shape it using your hands or a silicon mold.

Tips:

Be careful not to go overboard with eating sour treats as they can make your blood pressure drop.
